Lunar Eclipes

I got a post from this astrologer about tonight's lunar eclipse. She said there is another eclipse on July 1 and that this can be a real shaky time for many of us, bringing unexpected twists and turns as our Destiny takes shape. Oh and it is also the last game of the Stanley Cup Hockey Finals tonight and my husband favors one time and my son Brian favors the other! This could be very tense! 



My husband Joe made a "loose meat sandwich" the other night for dinner. These are soo good you can hardly believe it! His recipe is loosely (get it?) based on Maid-Rite Sandwiches from the restaurant chain in Iowa, but much better. Of course I am prejudiced! Think Sloppy Joe's without the sloppy.

Here is Joe's recipe:

Take 1 1/2 lb. ground chuck or round and using a heavy fry pan heat until the pan is fairly hot . Add the ground beef little by little, breaking it up with a wooden spoon. As soon as all the beef is added, start adding chicken stock. Turn heat to medium low . Add more stock as it boils away, using around 12 oz. of stock all told. Check for seasoning and add salt and pepper as needed at the end.
Heat your hamburger buns-they're traditionally steamed for loose meats-and use plenty of pickles on the side! We don't use ketchup or mustard on ours but you may like to. UMM. It makes me hungry to write about them!
